Ingredients

  • 1 ½ cups buffalo milk yogurt
  • ¾ cup whole milk
  • 3 tbsp heavy whipping cream
  • 4 tbsp organic cane sugar
  • 4 ice cubes
  • Optional: pinch cardamom powder saffron strands, Rooh Afza (rose syrup)
  • Garnish: malai topping clotted cream or chilled glass garnish with mint

Equipment

  • High-speed blender
  • Tall glasses
  • Spoon for garnishing
  • Measuring cups/spoons

Method

  1. Combine yogurt, milk, cream, sugar, and ice in a high-speed blender.
  2. Blend for 60-90 seconds until completely smooth and frothy. For a more authentic texture with tiny ice chips, pulse 3-4 times rather than blend continuously.
  3. Taste and adjust sugar or yogurt.
  4. Pour into chilled glasses with a frothy top.
  5. Garnish with saffron, cardamom, or malai.

Notes

Use coconut or almond yogurt for a dairy-free Lassi option. Sugar is adjustable — use less or substitute with honey or dates for a natural version.
